I’ll be the first to admit that I don’t make the healthiest choices when I’m eating or cooking. I’ve always simply eaten what I’ve wanted and never had to deal with any really adverse effects. I love to eat good food and the thought of any kind of diet makes me cringe. Unfortunately though, if I want to keep my good health I need to start making better choices. I recently had my cholesterol tested and although I knew it was high from tests in years past, it’s gotten worse. My doctor has given me some time to see if I can lower it naturally before having to go on medication. So, while I still don’t think I can follow any kind of strict diet, I’m going to start consciously trying to make better decisions in the food I eat. And now that I’ve said it here, you can help keep me accountable.

That doesn’t mean that I won’t still be posting fun things here, I’ll just be eating better in between. However, today I am going to post something healthy! There’s a group of bloggers here in Minnesota and I have been able to meet some really great food bloggers that provide a wide array of perspectives. One of those unique perspectives comes from Kate. Kate and I probably don’t see eye to eye on a lot of our daily food issues but I respect what she does and she makes some pretty amazing looking food. She shows me that with a little thought and planning I can still make great food that’s healthy too.

Today I made these Wild Rice Stuffed Peppers that Kate created a few weeks ago. Coming from a meat lover, full on carnivore, they were amazing. Garlic and shallots are cooked together and then combined with beans, fresh tomatoes and corn. Cheese and panko bread crumbs are mixed in to make a filling that is then placed into a slightly charred pepper. They were amazingly filling and above all they just tasted great.
