Recipe Instructions:

Mahi Mahi Tacos :

  • To make the slaw, combine mayonnaise, avocado, garlic, cilantro, lime, and all the remaining ingredients together. You can blend them in a mixer or blender. Once combined, combine with slaw and keep aside.
  • Add all the chipotle aioli ingredients together in a separate glass bowl and set aside too.
  • To make the Mahi Mahi marinade, mix all the powders, lime juice, seasonings, and olive oil. Coat the Mahi Mahi fish fillets with the marinade and keep them aside for 15-20 minutes. The longer you marinate the fish, the richer and smoother the flavor will be.
  • Use a heated grill to cook the fish on a grill pan or iron skillet. Pierce each fish with a skewer and place it carefully on the pan. Grill the fish for 4 minutes on each side. Turn the fish slowly using the skewer sticks. If you do not have bamboo skewer sticks at home, you can use tongs to flip the fish without accidentally breaking it. Cooking the fish should take you no more than 8-10 minutes in total.
  • You can heat the tortillas on a grill rack while the fish is grilling. Make sure they’re nice and heated. Layer the fish with the slaw, cilantro, chipotle aioli, fresh dressing ingredients, and hot sauce in the warmed tortillas. Make sure the fish goes in first and then you top it off with all the other dressings.
